Understanding your customers behaviour begins with understanding your customer. Different groups of people react and interact in different ways but this can be studied and then acted upon to improve their overall brand experience. 

This is nothing new! We know that understanding how to communicate to and engage with customers will help get them through the door but the journey doesn't end there. As hosts, we need to have as much control over the micro-events as possible to ensure our diners have a positive experience. 

The menu is a vital part of this. A well designed menu will take into account many factors and should tie the visit up with a lovely bow! These factors alone can sometimes be small but when pieced together can form a powerful opinion in the customers subconscious.
